Cherry Tomato Tart

Serving suggestion: plate with a simple green salad dressed with balsamic and salt

Ingredients (8 servings):
2 c almond flour
1/2 tsp salt
1 tbsp thyme leaves
6 cloves roasted garlic
1/2 c plus 2 tbsp olive oil
1 egg
1 c ricotta cheese
1/2 c Parmesan cheese
1/2 c sliced almonds
Handful of basil
Lemon juice
1.5 c heirloom cherry tomatoes

Method:
Preheat the oven to 350°F.
Pulse almond flour, salt, and thyme in food processor. Add 2 cloves roasted garlic and pulse again. Add 2 tbsp olive oil and egg and process until dough forms. Press into a 10” round tart pan and bake 7 minutes.
Pulse cheeses with sliced almonds, basil, lemon juice and the leftover olive oil.
Spread ricotta mix in shell and top with whole cherry tomatoes. Brush with olive oil. Bake for 60 mins, until crust browns. Cool in pan.
