Roasted Garlic Hummus.

Serving Suggestion: make your own pita chips by toasting pita triangles in olive oil.

Ingredients (4-6 servings):
1/4 c olive oil
2 tbsp warm water
10-12 cloves roasted garlic
1 tbsp tahini
13 oz can garbanzo beans
Juice of half a lemon
Salt
Chives
Paprika
Pita bread
1 tbsp olive oil

Method:
Combine olive oil, warm water, garlic cloves, tahini, garbanzo beans, lemon juice, and salt in a food processor or blender.
Puree for 2-3 minutes until mixture is creamy and thick, stirring bits from the sides back in. Adjust salt as needed. Top with chopped chives and paprika.
Make pita chips by cutting pita rounds into 8 triangles each, then brushing with olive oil and heating for 8-10 minutes at 450°F. Salt as desired.
