Turkey-Cran Meatballs

Serving suggestion: pile onto roasted fingerling potatoes and sliced almonds.

Ingredients (16 meatballs):
3/4 lb 85% lean ground turkey
3/4 lb 93% lean ground turkey
1 egg
1/2 c breadcrumbs
1/2 tsp salt
2 c spinach
1/4 c onion
1/4 c Parmesan cheese
1/4 c dried cranberries

Method:
Prepare a pesto by pulsing spinach, onion, Parmesan cheese, and dried cranberries in food processor.
Combine both ground turkey meats with egg, breadcrumbs, and salt. Knead the spinach pesto by hand, being careful not to over-mix.
Form golfball sized meatballs. Place on parchment-lined baking sheet.
Sprinkle with ground black pepper.
Bake meatballs for 20 minutes at 400°F.
